(Earlier Sampere from the French, and exactly as most English folk would pronounce it, St. Pierre, St. Peter's Herb). A native wild flower to be found on precarious cliff faces or in shingle by the sea, it is a small bushy plant with fleshy, grey-green foliage divided into very narrow leaflets, and bearing in summer umbels of yellowish-green flowers. The whole plant is "of a spicie taste with a certaine saltnesse" and long held in great repute as a salad ingredient particularly when turned into a warm aromatic pickle. Chopped and mixed with olive oil and lemon juice, the leaves make an excellent salad dressing. 6-12 ins.
